22nd Anniversary

Of the day I gave my mother a scar, because I was a butt head. Mom I know you don't like that term but the middle of my dorsal(posterior) side was where my superior end was supposed to be. And personally I think your scar is the best scar that was ever created closely followed by the 6 inch one I have. Because of it I have my best friend and today is her birthday. 

I have yet to figure out how I'm going to celebrate, it is her special birthday turning 22 on the 22nd; or what birthday treat to make. (also I know that semi colon doesn't belong but I wanted to put it there because we talked about them in my persuasive writing class and I wanted to demonstrate how I'm terrible at knowing where to put them, which is unfortunate because I have a bad habit of run-on sentences and supposedly if you know how to use them you can make long sentences and they aren't considered to be a run-on; who would have thought. :) Sorry Lori, if my blog is painful to read, I'm not good at english because I just don't take the time.)

On Wednesday I made cheesecake cupcakes with an Oreo cookie crust. Smith's had cream cheese on sale for 99 cents and so I stocked up, well not really because then I used it to make cheesecake. 
They were really delicious, and soft enough for me to eat.




They were a hit with both my study buddy and my football team*.

So if you don't know by now I currently lean towards eating softer foods, well then you obviously do read my blog or your way behind. I've decided pasta is a good soft food to eat and I like good pasta not just macaroni noodles with some Ragu sauce on it. (sorry if I offended any Ragu fans)

SOLUTION: Buy fresh herbs to put in my pasta 

So it costs just as much to buy herbs in the produce section as it does to buy a plant, so I went to Walmart to get a plant of Basil and a plant of Rosemary. It was quite the disappointment because they didn't have a big variety of plants to choose from and so I got what they had, which is a basil plant that looks like a tree and a strange looking rosemary plant but they smell normal so I think they will be fine. The basil plant has really small leaves though.

*Tonight was the first football game where I was the sideline coach instead of playing, it was hard, and kinda sad but I got through it, and my team played exactly how they needed to. Go SUPER BASS (pronounced like the musical term, not the fish, contrary to popular belief)

EDIT(Just for you Aunt Randi, even though I got the recipe from the family cookbook):
Cheesecake Cupcakes (makes about 20)
3-8oz. pkgs. light cream cheese
1 cup sugar
1 tsp. vanilla
3 eggs
Oreo Crust*
Line cupcake pans with foil liners.  Put 2-3 tsp. of oreo crust crumbs into cupcake liners (prebaking is not needed for this recipe).  Whip cream cheese with sugar and vanilla until well blended.  Add eggs one at a time mixing well after each addition.  Divide cream cheese mixture evenly into prepared cupcake liners(I used the aluminium ones because that's how I've always seen them done).  Bake at 350 degrees for 20 minutes.

While cakes are baking mix together:
1 cup sour cream
2 Tbsp. sugar
¼ tsp. vanilla
Top each hot cupcake with 1 teaspoon of sour cream topping and return to the oven and bake an additional 5 minutes.  Allow the cupcakes to cool slowly.     


*Oreo Crust
1 ½ Cups Oreo crumbs (a little more than one column in a regular size package, use regular not double stuffed)
1/3 cup melted butter

Mix crumbs and butter. Divide into cupcake liners.
Or press mixture firmly against bottom and sides of a 9” pie plate. Bake in a 350 degree oven for 10 minutes.  Cool.  Fill as desired.

  2. I loved your grammar comment, it made me smile. Contrary to popular belief, I'm not a grammar nazi, and I'm quite okay with reading other people's writing without judging them; this has not always been the case, but now, as a Linguist I enjoy seeing how the English language morphs and changes due to the internet and social networking (just had to throw in a semi-colon for ya!). Oh, and by the way, your blog is far from painful to read. I've read things that are painful as a writing tutor, and your writing does not even come close. :)
