Groundhog Day

This holiday always makes me think of my Grandma Jesse, she was my adopted grandma, since my real ones didn't live close (well close enough to visit all the time). She was from Pennsylvania, and so Pennsylvania Dutch things were important to her. She was also the reason I knew about funnel cakes (which I made last week), I have never had one at a fair, which I didn't realize was weird until recent years.

Anyways, when I was little I would always wish the groundhog wouldn't see it's shadow because I wanted spring to come early, because then maybe my Mom would let me wear shorts before my Dad's birthday (maybe I'm just making this up, but when I was little we had to stop wearing shorts after Halloween and then we could start wearing them again the middle of March aka my Dad's birthday). Little did I know that in Arizona there is no such thing as winter, and I was actually wishing for summer to come early. And now that I'm in Utah and Spring doesn't come until June, Groundhog day has no meaning, well maybe this year. Since we haven't had a winter yet maybe spring will come in six weeks, like Punxsutawney Phil predicted. Or maybe it will come earlier like my groundhog predicted, because strangely enough, today is one of our few winter days and the sun isn't shining. So my groundhog didn't see his shadow.

I'll be honest sometimes I amaze myself with how cute I am. I didn't technically see this recipe on Pinterest, but it was because of a different link I saw on Pinterest that I found this recipe and then I pinned it. I used carrot cake and cream cheese frosting because that's really the only cake I REALLY enjoy and well it's a cake that a groundhog would enjoy living in. The groundhogs are almond joys with mini m&ms, white chocolate, and pink gummies. Also you can't tell from the picture, but the cupcake liners are footballs, even groundhogs are getting ready for the super bowl. ;)

  1. Cute! And carrot cake is the only cake you enjoy? I'll have to make you some good chocolate cake sometime. Grandma Maroney, who claims to not like chocolate, requests my molten chocolate cupcakes.

  2. I look forward to trying your chocolate cake! And it's a lie that I only enjoy carrot cake, I also LOVE lemon cake with the glaze on it and angel food cake topped with strawberries. I should have said that carrot cake was the only cupcake I could think of that would work with the almond joys AND that I would enjoy.
