Frozen Breakfast Burritos

Something about providing your child with all of the nutrients they need to live leaves you starving when you get up in the middle of the night (or lucky me early morning because baby sleeps like a champ) and I want something quick, filling and tasty to eat. My latest solution Frozen Breakfast Burritos. James' sisters made them for my baby shower and they were great, when my mom came to visit right after Lily was born she was trying to do all she could to make my life easy after she left and I mentioned them and she made it happen. We made more when she was in town visiting over fall break and I wanted to make sure there were plenty in the freezer for when I go back to work in a couple weeks so I made another batch of 25. I' make tortilla snob and no longer live next to Mexico so I bought the raw tortillas from Costco. The following is for me to remember the proportions but you can make them however you want, with whatever ingredients you like in your breakfast burrito.

25 tortillas
5 medium potatoes
18 eggs
1 large onion
2 bell peppers
1 lb breakfast sausage
1 lb bacon ( I didn't use a whole pound, just what was left from making Zuppa Toscana yesterday)
Cheese ( I don't know how much because I had James shred the cheese while I was scrambling the eggs)
Hot sauce

I cooked up all of the ingredients and mixed them all together, except for the cheese and hot sauce. I then put the hot sauce on the tortilla first, then the cheese and then the filling mixture, I found this order to be best so I didn't get hot sauce all over my hands while rolling. I left one end open and then rolled them individually in a paper towel so they wouldn't stick together when I froze them in a bag together. You can freeze them in a single layer and then stick them in a bag but I was making them at night and didn't want to have to wait for them to freeze so I could put them in a bag before I went to bed. I also always wrap them in a paper towel eventually to warm them up because it keeps the moisture in so you don't get a dry, crusty tortilla. There was a little filling left but James ate it for a snack. To warm them I pull them out of the freezer and put them in the microwave for 45 seconds on each side.
